Creamy one-pot pasta (MM original recipe)
A one-pot pasta that’s ready in minutes and basically do-it-yourself! Perfect for those times when you want something refreshing but don’t have time to cook or just don’t feel like spending hours on the stove. This recipe is quick and easy – just throw the veggies in the pot, whizz up the sauce in a blender and toss in a pasta of your choice. Let it simmer and enjoy! Try it and see for yourself – it’s the same as always, wholemeal and gluten-free.

You will need:
For pasta:
- 1 medium-sized onion (chopped)
- ¼ cup chopped sun-dried tomatoes (about 35 g)
- 1 cup chopped asparagus or green beans (120 g)
- 2 cups of thinly sliced zucchini (260 g)
- 250 g of a favourite gluten-free pasta (for example, fusilli or penne)
- Fresh basil leaves (for serving)
For pasta sauce:
- Cashews – 50 g
- Chopped tomatoes – 425 g
- Onion powder – 8 g
- Garlic (3 cloves) – about 12 g
- Chilli flakes – 0,5-1 g (to taste)
- Dried Italian herbs – 5 g
- Water – 600 g (slightly more if needed)
How to make a one-pot pasta?
Start by preparing the sauce. To do this, place the cashews, chopped tomatoes, onion powder, garlic cloves, chilli flakes (if using), dried Italian herbs and water in a blender. Blend into a smooth silky sauce and set aside to stand.
Heat a little water in a medium-sized pan or saucepan, add the chopped onion and sun-dried tomatoes and heat for 3-5 minutes, stirring occasionally, until the onion turns slightly translucent. Add chopped asparagus or green beans and thinly sliced courgette to the pan. Heat the vegetables over a high heat for a further 3-5 minutes until they start to soften and brown slightly.
Add the sauce to the pan with the vegetables (if necessary, mix the sauce thoroughly beforehand if it has become thick) and any gluten-free pasta you like. Mix everything thoroughly, bring the mixture to the boil and reduce the heat. Cover the pot or pan with a lid and simmer over a low heat for 10-15 minutes until the pasta is al dente and the sauce has thickened. If the sauce seems too runny, remove the lid and leave to simmer for a few more minutes.
Serve with fresh basil and enjoy immediately!
