Colorful pasta salad
This time, we have a delicious, tasty and healthy pasta salad that can be enjoyed on its own as a meal or, for example, on a birthday dinner.

To prepare you need:
- 160 g red lentil pasta (or other gluten-free pasta of your choice)
- 100 g green peas (frozen and thawed)
- 100 g chopped red peppers
- 70 g grated carrots
- 1 finely chopped fresh celery stalk
- 35 g finely chopped red onions
- 100 g soaked Indian nuts
- 100 ml of water
- 2-3 tablespoons freshly squeezed lemon juice
- 1 small garlic clove
- ¼ teaspoon mustard powder (optional)
- sea salt (to taste, optional)
- a food processor or more powerful blender
How to make pasta salad?
For the salad: Cook the pasta according to the package instructions in lightly salted water with sea salt. While the pasta is cooking, chop the vegetables into a large bowl. Once the pasta is tender, pour it into a colander, drain, and cool it under running cold water. Then add the cooked and cooled pasta to the bowl with the chopped vegetables and prepare the dressing.
For the sauce: to make the sauce, use a food processor or a high-powered blender to blend the Indian nuts, water, lemon juice, salt, garlic and mustard powder, which have been soaked overnight, into a smooth, silky mixture. When the sauce is ready, stir it into the vegetables and pasta. Serve with a few green herb leaves and enjoy!
