Colorful pasta salad

This time, we have a delicious, tasty and healthy pasta salad that can be enjoyed on its own as a meal or, for example, on a birthday dinner.

Servings: 2-3 salad lovers

To prepare you need:

  • 160 g red lentil pasta (or other gluten-free pasta of your choice)
  • 100 g green peas (frozen and thawed)
  • 100 g chopped red peppers
  • 70 g grated carrots
  • 1 finely chopped fresh celery stalk
  • 35 g finely chopped red onions
  • 100 g soaked Indian nuts
  • 100 ml of water
  • 2-3 tablespoons freshly squeezed lemon juice
  • 1 small garlic clove
  • ¼ teaspoon mustard powder (optional)
  • sea salt (to taste, optional)
  • a food processor or more powerful blender

How to make pasta salad?

For the salad: Cook the pasta according to the package instructions in lightly salted water with sea salt. While the pasta is cooking, chop the vegetables into a large bowl. Once the pasta is tender, pour it into a colander, drain, and cool it under running cold water. Then add the cooked and cooled pasta to the bowl with the chopped vegetables and prepare the dressing.

For the sauce: to make the sauce, use a food processor or a high-powered blender to blend the Indian nuts, water, lemon juice, salt, garlic and mustard powder, which have been soaked overnight, into a smooth, silky mixture. When the sauce is ready, stir it into the vegetables and pasta. Serve with a few green herb leaves and enjoy!
