Crunchy sweet potato fries with creamy lemon sauce

The sweet potato fries get a crispy coating in the oven, and the star of the sauce is natural cashews accompanied by lemon and chilli instead of the classic oily mayonnaise. You will need for preparation:
- 2 medium-sized sweet potatoes
- ½ – 1 medium lemon juice
- 60 g cashews (soaked)
- 1 fresh garlic clove
- 90 g water
- salt (to taste)
- ½ teaspoon cayenne (or add to taste)
- a dash of maple syrup or honey (about ½ teaspoon)
How to prepare sweet potato fries?
To make the fries, do the following:
Preheat the oven to 180 degrees and line a baking tray with baking paper. Then wash and, if desired, peel the sweet potato. Slice the sweet potato into fry-like sticks and season with salt and onion powder. Arrange the sweet potato sticks on a baking tray lined with baking paper so that they are not on top of each other in a heap, but separate. This way, they will cook crispier! Bake the fritters in the oven at 180 degrees for about 15 minutes, then stir gently and bake for another 10-15 minutes.
For the sauce:
Soak the cashews in hot water for 15-20 minutes. Then mash them with lemon juice and coriander, and seasoning to a silky sauce. Serve the fritters with the sauce and enjoy immediately!
